Mocha Rice Pudding Recipe
Ingredients:
- 1 cup, uncooked RiceSelect Sushi Rice
- 2 cups milk 1/4 cup coffee liqueur
- 1/2 cup sugar
- 1 cup semisweet chocolate chips
- 3 tablespoons toasted pecans, chopped
Directions:
- Prepare rice according to package directions.
- Combine rice, milk, liqueur, and sugar in a saucepan. Cook for 20 minutes over low heat stirring often.
- Stir in chocolate chips and cook for 1 minute more, until chocolate melts completely.
- Transfer to serving bowl and chill for at least 1 hour before serving. Sprinkle with pecans (and extra chocolate chips, if desired) before serving.

Directions:
Instructions: Cooking Rice for Sushi: 1 cup rice, 1 1/4 cup water, 2 1/2 tbsp rice wine vinegar, 1/2 tbsp sugar, 1/2 tsp salt. Thoroughly rinse 1 cup rice in cool water. Repeat process until water runs clear. Drain well. Place rice in heavy saucepan. Add water. Bring to a boil. Reduce heat to low. Cover and simmer 20 minutes or until all water is absorbed. Remove pan from heat and let stand 10 minutes. In a small bowl stir together rice wine vinegar, sugar, and salt until dissolved. Fold dressing into rice. Use immediately.
