This traditional Southern Sausage Seasoning is mild on peppers, but packed with extra sage. It is also a reduced salt recipe and contains no MSG. Add additional salt to taste – 1 to 4 teaspoons per packet as needed. Each 8 oz. bag correctly seasons 25 lbs. of meat or use 3 teaspoons of seasoning per 1 lb. of meat.

TO MAKE FRESH SAUSAGE YOU NEED:
25.0 Lbs. Boneless Pork, Beef, Deer or mix thereof (15 % to 30 % fat)
1 Bag Jim’s Own Xtra Sage Southern Sausage Seasoning

MANUFACTURING PROCEDURE:
1. Grind meat through a 1/2 inch plate.
2. Mix seasoning evenly through meat .
3. Regrind through a 3/16 inch, 5/32 inch or 1/8 inch plate.
4. Package in bulk or stuff into casings.
